Colcannon (Irish Mashed Potatoes)

Ingredients

2 lbs potatoes, peeled and diced

5 tbsp butter

3 c chopped swiss chard, kale or cabbage

3 green onions, chopped

1 c milk (or half milk/ half broth for a lighter version)
Directions
Boil potatoes in salted water for 15-20 minutes. Drain.
Heat butter and cook greens for 4-5 minutes. Add green onions and cook 1-2 minutes. Add the milk to the greens, mix well.
Add the potatoes and mash into the greens. Season and serve with butter on top.
