Corn and Dill Potato Salad

We love potato salad with a vinaigrette. This one is a great way to add some seasonal vegetables as well.
Ingredients

1/4 cup rice vinegar

2 tsp salt

3 1/2 lbs potatoes (Yukon Gold)

2 TBSP salt

1/4 cup vinegar (or lemon juice)

2 TBSP dijon mustard

1 tsp salt

1/2 tsp pepper

1/2 cup olive oil

2-4 TBSP fresh dill
-
1 cup diced peppers
-
1 cup corn
-
1/2 cup sliced red onion
Directions
Combine the rice vinegar and 2 tsp salt into a bowl and mix well.
Pour cold water over the potatoes and 2 TBSP salt cover and once its boiling, bring down to a simmer for 20-25 mins until tender with a fork. Peel and cut into 3/4 chunk and toss with rice vinager mixture.
Whisk together the 1/4 cup vinegar (or lemon juice), Dijon mustard, salt, pepper, and olive oil.
Add fresh dill, diced peppers, corn and red onion to your potatoes and mix in the dressing.
Add seasoning to your liking. Serve and enjoy.
