I used this salad dressing recipe and loaded the salad greens with tomato, cucumber, radish, feta and olives. Very tasty meal. If you can, eat al fresco. It's how we eat most of our summer meals, and so enjoyable.
Ingredients
Homemade Salad Dressing
1/4 c olive oil
3 tbsp red wine vinegar
1 garlic clove, minced
1/2 tsp dried oregano
1/4 tsp dijon mustard
1/4 tsp salt
few grinds of pepper
Directions
Combine all the ingredients in a jar. Shake to blend. Drizzle over salad. Refrigerate leftover dressing.
