Garlic Scape Omelette or Frittata
Breakfast or Lunch
5 eggs, beaten
salt and pepper
10 garlic scapes, cut into 2” pieces
4-6 mushrooms, sliced
½ - ¾ c. shredded cheddar
2 tbsp butter
Melt the butter in a non stick pan. Add the scapes and mushrooms, cook until tender.
Season the beaten eggs with salt and pepper. Pour over top of scapes and mushrooms, cover and cook over medium low heat until set.
Place the cheese over one half, flip the other half over top. Cover and cook at low heat for a couple of minutes.
