I am so excited about Ontario corn finally arriving. I had garlic scapes in my fridge and decided to combine them for a vibrant, fresh salad perfect with grilled sausage, steak or chicken.
Grilled Corn and Garlic Scape Salad

This recipe combines seasonal vegetables that say warm summer evenings eating al fresco!

Ingredients

4 cobs of corn, husked

2 tbsp butter
-
10 garlic scapes
-
1 red pepper, halved and seeded

2 tbsp olive oil
-
1 small jalapeño, sliced (optional)

salt and pepper
-
1/4 c fresh herb, chopped (cilantro, chives, tarragon, basil or parsley)

1/3 c feta
-
1- 1/2 tbsp fresh lemon juice
Directions
Coat the corn with the softened butter. Combine the garlic scapes and red pepper with the olive oil.
Grill the corn, scapes and red pepper until charred. About 8-10 minutes.
Cut the corn off of the cobs, chop the scapes and red pepper and place into a serving bowl. Add the jalapeño if using. Add the feta, herbs and lemon juice. Season with salt and pepper. Add more lemon juice if needed.
