Grilled Halloumi with Roasted Red Pepper and Feta Flatbread

Halloumi is such a great meat substitute. When grilled it is crispy on the outside and squeaky and melty on the inside. You can serve it as a burger or sandwich, cube it and cook on skewers.
Ingredients

1 pkg of halloumi, sliced into 4 pieces

olive oil
-
Seasoning of your choice, oregano and smoked paprika or whatever you like

Flatbread, naan or pitas

finely chopped roasted red peppers

crumbled feta
-
garlic clove, minced

drizzle of olive oil

Directions
Halloumi
Heat the barbecue or griddle pan. Brush the halloumi with oil and then sprinkle the seasoning on top. Grill until golden and soft on the inside.
Serve with a salad and flatbread.
Flatbread
Combine the peppers, feta, garlic and oil.
Spread over the flatbread, bake or grill until crispy on the bottom.
Slice and serve with tzatziki to dip.
