Grilled Shrimp with Pesto

Grilled Shrimp with Pesto

Serve with my Corn and Dill Potato Salad, or a quick Tomato, Cucumber Salad, instructions below. You will note I don't include amounts, this is definitely a to-taste recipe.

Ingredients

1 pkg shrimp, thawed and peeled
smoked paprika
olive oil
salt and pepper
pesto or chimichurri

Directions

Toss the shrimp with the oil, paprika, salt and pepper. Skewer the shrimp and cook on the barbecue for 5-7 minutes or until pink in colour. Drizzle with pesto or chimichurri before serving.

Tomato and Cucumber Salad

Cut up tomatoes, cucumber, red onion, avocado, arugula and fresh dill. Combine in a bowl. Toss with your favourite salad dressing. Season with salt and pepper.
