These
High Protein Coconut Yogurt Clusters are a delicious healthy dessert recipe for
summer. Great for the whole family to share at the beach, or at a family gathering.
Ingredients

1/2 cup shredded coconut

2 scoops Just Clean Chocolate protein powder (use just one scoop if you want a little less chocolate)

1/4 cup cashew butter

1/3 cup vanilla yogurt (I used Greek for extra protein)

1 package of Pure Food 72% dark chocolate chunks

1 teaspoon coconut oil

Chocolate Coating
Directions
Add coconut, yogurt and cashew butter to a bowl. Mix together until fully combined.
Make little mounds/balls with the mixture onto a sheet pan, lined with parchment paper.
Freeze for 30 minutes.
Melt together chocolate and coconut oil over a stove top or in the microwave 2-3, 30 second intervals.
Carefully roll each cluster in chocolate (they will be a little sticky).
Freeze again for 10-15 minutes, until set.

Recipe Note
This makes about 6 large clusters, or make them smaller to make 12. These can be stored in the fridge or
freezer.
NOTE: you could swap out the chocolate for vanilla protein powder.
