My Favourite Lentil Soup

"I love mixing up and tweaking recipes to come up with my own style and favourite ingredients. This soup is really tasty and satisfying, and comes together quickly. I never get tired of eating it. Bonus: it's completely vegetarian."

  • ¼ cup olive oil
  • 2 carrots, chopped
  • 1 medium to large yellow onion, chopped
  • 4 cloves garlic, finely diced
Saute carrots and onion gently in olive oil until beginning to soften. Add garlic, then add:
  • ½ tsp thyme
  • 1 tsp curry powder
  • Pinch of red pepper flakes
  • 2 tsp cumin

Saute till fragrant then add:

  • 8 cups vegetable stock
  • 1 cup green lentils
  • 1 can diced tomatoes
  • Salt and pepper to taste

Bring to a boil, then turn down to a low simmer for 30 minutes. Add 1 cup chopped kale, simmer 10 more minutes until kale has softened.

Goes great with a hearty bread.
