My Favourite Lentil Soup

Ingredients

¼ cup olive oil

2 carrots, chopped

1 medium to large yellow onion, chopped

4 cloves garlic, finely diced

½ tsp thyme

1 tsp curry powder

Pinch of red pepper flakes

2 tsp cumin

8 cups vegetable stock

1 cup lentils
-
1 can diced tomatoes

Salt and pepper to taste

1 cup chopped fresh or frozen kale
Directions
Saute carrots and onion gently in olive oil until beginning to soften. Add garlic, then add next four spices: thyme, curry powder, red pepper flakes and cumin.
Saute till fragrant. Add stock, lentils, canned tomatoes and salt and pepper.
Bring to a boil, then turn down to a low simmer for 30 minutes. Add the cup of chopped kale, simmer 10 more minutes until kale has softened.

Goes great with a hearty bread.
