This is a filling but not too heavy soup. If you have leftover cooked chicken you can add that, or chickpeas for protein.
We had lightly toasted baguette slices with melted cheese along with the soup. Very good.
Potato Kale Soup

If you like it spicier, increase the cayenne. This soup freezes well, and is great to have on hand for a quick, nutritious dinner.
Ingredients

1 tsp olive oil

1 small onion, chopped

2 garlic cloves, minced

½ tsp ground cumin

¼ tsp cayenne

2 c diced potatoes

4 c broth
-
½ - 1 c water

1 bunch of fresh kale, stems removed and roughly chopped

½ red pepper, diced

2 tsp lemon juice
-
salt and pepper to taste
Directions
Heat oil, sauté onion until soft. Add garlic and spices. Stir, then add the potatoes, broth and water. Add the kale in handfuls, then the red pepper and lemon juice, stir. Cover and simmer until the potatoes are tender.
Taste and season with salt and pepper and more lemon juice if needed.
