Salad with apples, cheddar and toasted pecans

A sweet, crisp and peppery combo. I've included my Vinaigrette recipe, below.

Ingredients

salad greens (I used arugula)

grated carrots
-
thinly sliced red onion

sliced apple, choose a more tart apple

diced or grated cheddar

toasted pecans (or nuts of your choice)

6 tbsp olive oil
-
2 tbsp honey
-
1 tsp dijon mustard

2 tbsp apple cider vinegar

salt and pepper
Vinaigrette
Directions
Combine all ingredients, drizzle with vinaigrette. Top with toasted pecans. You could also add dried cranberries.
For the vinaigrette simply whisk ingredients together.
