Sausage, Kale and White Bean Soup

If you want to freeze some of this soup, cook the pasta separately and add as needed when you are serving it.
Ingredients

2 tbsp olive oil

1 pkg. Hayter's Italian Turkey Sausage, casing removed and broken into pieces

½ tsp crushed chili flakes

1 medium onion, diced

2 medium carrots, diced

2 celery stalks, diced
-
2 garlic cloves, finely chopped

6 c chicken broth

2 tsp dried basil
-
2 tsp dried oregano
-
2 bay leaves
-
2 c chopped tomatoes (or a 14 oz. can of tomatoes with the juice)

1 small can white kidney beans

3 c chopped kale
-
1 ½ c small pasta, shells or macaroni

1 c grated parmesan cheese
Directions
Heat the oil, add the sausage and cook until no longer pink.
Add the onion, celery, carrots and garlic. Cook for 6-8 minutes. Add the broth and dried herbs, cook at a simmer for about 20 minutes. Add the tomatoes and can of beans, simmer for another 10 minutes. Add the kale and simmer until tender.
Add the pasta and cook for 8-10 minutes or until tender.
Serve with the grated parmesan cheese.
Recipe Note
I like turkey sausage, but you can substitute pork sausage in this recipe.
