Shrimp and corn are a perfect combination of flavours, great together in tacos or on a pizza.
This is a quick dish to make with lots of taste, similar to Mexican Street Corn.
Shrimp in a Creamy Corn Sauce

Serve this dish with additional cilantro, slices of lime and an extra sprinkle of chili powder (optional).

Ingredients

2-3 cobs of corn, grilled, kernels removed, set aside

1 small bag of shrimp, thawed and shelled

2 tbsp olive oil

1 tsp chili powder

Salt

2 tbsp butter
-
3/4 c diced onion
-
4 garlic cloves, finely chopped

1/2 tsp cumin
-
1/2 red pepper, diced
-
1 c half and half (10%) cream
-
1/2 c crumbled feta
-
1 tsp smoked paprika
-
juice from 1/2 lime
-

Directions
Heat the olive oil. Season the shrimp with the chili powder and salt. Cook for 2-3 minutes per side. Remove from the pan.
Melt the butter in the same skillet. Add the onions, cook for about 4 minutes.
Add the garlic, cumin and red pepper. Cook for 3-4 minutes longer.
Add the corn, then cream and smoked paprika. Bring to a simmer, add the feta and shrimp into the skillet. Heat through, add the lime juice and cilantro.
