Cowboy Caviar

Ingredients

• 3 small tomatoes, seeded and diced 

• 2 avocados, diced

• 1/3 c red onion, diced

• 1 can black beans, rinsed and drained

• 1 can black eyed peas (or any other small beans) rinsed and drained 

• 2 c grilled corn 

• 1 pepper, diced

• 1 jalapeño, thinly chopped

• 1/2 c cilantro, chopped 

• 1/3 c olive oil 

• 1 garlic clove, minced

Dressing

• 2 tbsp lime juice

• 2 tbsp red wine vinegar

• 1 tsp sugar

• 1/2 tsp each salt and pepper
