This Strawberry Pie is the perfect dessert for your Canada Day celebrations. I prefer using the fruit based glaze which works as well as a gelatin based one. If you're pressed for time, use a frozen pie crust from our freezer. I made my pie crust in a tart pan. You can also divide the strawberries up into tart shells.
Pipe or spread whip cream around the edges for a red and white dessert!
The sauce can also be used as a glaze on top of strawberries on tarts.
Ingredients
9" pie shell, baked
8 cups fresh strawberries, hulled and washed and sliced
3/4 c sugar
3 tbsp cornstarch
1/2 c water
Directions
Place 1 cup of the strawberries in a food processor and purée, or mash thoroughly.
Place the sugar and cornstarch in a medium saucepan and whisk together. Add the water and puréed berries. Bring to a boil over medium heat, stir constantly. Cook for 3 minutes until thickened. Let cool.
Add the cooled glaze to the rest of the berries and mix. Spoon into the baked pie shell. Refrigerate for at least 2 hours to set. Decorate with whipped cream if desired.
