Strawberry Pudding Cake

This moist, strawberry laden cake is a great spring dessert. I love using buttermilk in my cake recipes.

Ingredients

Fresh strawberries, cleaned and chopped to equal a heaping cup

2 tbsp sugar to add to the berries

1 tsp lemon juice

1/2 c sugar

1/2 c butter, melted

1/2 c buttermilk
-
1 tsp vanilla
-
1/2 tsp almond extract
-
1/2 tsp salt
-
3/4 c flour
-
1/4 c almond flour (or use all regular flour)

1/2 tsp baking powder
-
1/2 tsp baking soda
-
1 tsp cardamom or cinnamon
-
sliced almonds for topping
Directions
Combine the berries, 2 tbsp sugar and lemon juice in a bowl. Let it sit for at least 15 minutes.
Preheat the oven to 350°. Line an 8" baking pan with parchment paper.
Whisk the melted butter and sugar. Add the buttermilk, extracts and salt. Whisk until combined.
Mix the flours, baking powder and soda and cardamom together. Whisk into the wet ingredients just until combined. Transfer the mixture into the prepared pan. Top with the berries, including the juice. Sprinkle with the sliced almonds. Bake for 30-40 minutes. Let cool for 5 minutes and enjoy!
