Made from scratch, this wonderful dessert is not too sweet. Pure enjoyment on a summer evening.
Ingredients

3 eggs at room temperature

1/2 c sugar

1 1/2 tsp lemon juice

1/2 tsp lemon zest

1/2 cup flour
-
1/4 tsp salt

1 tbsp unsalted melted butter

1/2 tsp vanilla

1 c whipping cream
-
1/2 c soft cream cheese
-
1/2 c sugar
-
1 tsp vanilla
-
3 c sliced fresh strawberries
-
1/4 c strawberry jam

Directions
Simple Cake
Preheat oven to 325 degrees F. Line bottom of 9" spring form pan with parchment paper, do not grease pan
Whip eggs on high speed of mixer about 5 minutes. On medium speed add juice and zest. Whisk flour and salt.
Stir a spoonful of batter into melted butter and vanilla. Add mixture back to bowl of batter and stir until blended. Pour into prepared spring form pan and bake 30 - 35 minutes. Let cool in pan.
Layer 1
Whip cream to soft peaks. Mix cream cheese, sugar and vanilla until well combined
Fold cream cheese mixture into whipped cream in 2 parts, refrigerate until needed.
Layer 2
Stir berries and jam together until well combined.
Making the Parfaits
Slice cake into 2 layers, then cut 12 cake circles the same size as the glasses you are using. (A cookie cutter is handy for this).
Spoon some of the berries into the bottom of the glass, top with a disc of cake, spoon or pipe whipped cream on top of cake. Repeat with berries, cake and cream. Spoon a few berries on the top.

These parfaits can be prepared up to 4 hours in advance.
