This is a salad that is great for lunch, but also combined with a green salad and grilled protein (chicken, shrimp, tofu, beef) makes a great dinner for a warm evening.
Tomato Chickpea Salad

I like my grilled chicken sliced over my salad, but my husband prefers his grilled chicken on the side.

Ingredients

1 jar or can of chickpeas, drained and rinsed

1 pkg of grape or cherry tomatoes, halved

1/2 c diced red onions

1 1/2 c diced cucumbers

1/2 c feta, crumbled

salt and pepper

1/3 c olive oil
-
1/4 c lemon juice or red wine vinegar

1 tsp dijon mustard
-
1/2 tsp maple syrup

salt and pepper
Dressing
Directions
Combine salad ingredients in a large bowl.
Dressing
Whisk together dressing ingredients, pour over the salad. Let sit for 15 minutes to combine the flavours.
Green Salad
Combine your favourite salad ingredients. I used leaf lettuce, spinach, red onion, shredded carrot, thinly sliced cabbage, basically whatever I had in my vegetable crisper.
Place the green salad on your plate, top with the chickpea salad and the protein of your choice. Drizzle with a sauce if you have one. We had tahini sauce on hand which worked well.
