Although we are all thinking about healthier eating after the holidays, following a week of having family here and lots of cooking I was ready for a quick, no-think meal after my first day back to work.
One of my guilty pleasure comfort meals is a Tuna Melt!
One of my favourite comfort foods. Quick and easy, and great for weeknights when you want something on the table in a hurry. Very good balanced out with a crisp, green salad.
Ingredients
Big foot ciabatta (from the bakery section) or any crusty bread you like
1 can of tuna drained
2 green onions, finely chopped
1-2 artichoke hearts, chopped
5 or 6 kalamata olives, diced
2-3 tbsp mayonnaise
1 tsp dijon mustard
1 tsp fresh dill, chopped or ½ tsp dried dill
salt and pepper
1 cup shredded cheddar
Directions
Cut the bread into 3 4" pieces, slice in half and place on a baking pan lined with foil.
Mix all ingredients together except the cheddar. Mix well.
Add about 1/4 c of the cheddar, mix and divide over the 6 pieces of bread. Top with the remaining cheese. Broil until the cheese is bubbling and browned.
