Although we are all thinking about healthier eating after the holidays, following a week of having family here and lots of cooking I was ready for a quick, no-think meal after my first day back to work.

I love when Ontario nectarines, peaches, plums and apricots start to appear on our shelves. I end up with so many that I can barely keep up with ways to eat them quickly. I always have fruit with my lunch, so sweet and juicy who needs dessert?
But, I love making desserts with them as well!
This is one of my favourite skillet suppers. I love to use chicken thighs in a recipe like this because they are so juicy and flavourful! These thighs from our new fresh meat selection did not disappoint.
