With the warmer temperatures our meal choices shift to barbecue and salads. This Greek Salad recipe goes well with grilled chicken, halloumi or shrimp. We often have it spooned over rice or mixed with pasta.

We grilled some pita bread and served it with a spoonful of tzatziki on the side.

Ingredients

2 tsp lemon juice

2 tsp red wine vinegar

1 tsp dijon mustard

2 tbsp olive oil

1/4 tsp dried oregano

salt and pepper

1 1/2- 2 c fresh tomatoes, cut into chunks

2-3 mini cucumbers, cut into quarters

1/2 c diced red onion
-
1 c feta, cubed or crumbled
-
1/2 c Kalamata olives, pitted and quartered

1/4 c chopped fresh mint or dill

Directions
Combine dressing ingredients and mix well.
Mix all salad ingredients in a large bowl. Toss with the dressing and stir to combine.
