This is a great recipe to add whatever extra vegetables you have left in your fridge. I had a small amount of broccoli that needed to be used up, so added it in. A filling, nutritious meat-free meal that stars healthy root veggies!
Jicama is a root vegetable that is low in calories and high in fiber and water. It is slightly sweet, like a cross between an apple, water chestnut and pear. They make great, low carb veggie fries like these simple ones!

Celery root (Celeriac) has a sweeter, milder taste than celery stalks and has less carbs than potatoes. You can grate it into a salad, cube it and use in a soup or stew recipe or cook it with potatoes and mash together which is one of my favourite ways to use it.
