Barbecue Cheesy Potatoes

Ingredients

1 ½ lbs thinly sliced potatoes

1 tbsp olive oil

Salt and pepper

1 onion, thinly sliced

2 tbsp fresh parsley, thyme or rosemary

¾ c grated cheddar

1/3 vegetable or chicken broth
Directions
Toss the potatoes with the oil, salt and pepper. Layer half of the potatoes on one side of a large sheet of foil. Top with the onions, herbs and cheese. Place the remaining potatoes over top. Slowly pour the broth over the top. Fold the foil over and seal the edges tightly to make a pouch.
Place on the barbecue at 400° heat, cook for 12 minutes. Carefully and quickly turn the package over and cook for another 12 minutes. The foil will puff up while cooking. Then place on the top grate while cooking the rest of your meal. Unwrap carefully to avoid the steam and enjoy!
