Barbecue Chicken Salad

Like my husband, you may prefer your barbecue chicken on the side. That's perfectly alright, too!
Ingredients

2 chicken breasts
-
your favourite barbecue sauce (we used a spicy one)

1 cob of corn, husk and brush with a little oil

1 bag of salad greens, we love Patchwork Gardens

sliced red onion
-
grape tomatoes, halved
-
grated carrot
-
avocado, diced
-
cheese of your choice (we used crumbled goat cheese)
-
croutons or toasted nuts
Directions
Grill the chicken until cooked through. Brush with barbecue sauce during the last 10-15 minutes so it doesn’t burn. Let the chicken rest for 5-10 minutes before slicing.
Grill the corn while the chicken is cooking until it is lightly charred on all sides. Let it cool slightly and cut the kernels off of the cob.
Prepare all of your salad ingredients in a big bowl or directly onto your plates (less dishes that way).
Top with the salad dressing of your choice (creamy or vinaigrette, bottled or homemade). Place the chicken on top, diced, sliced or on the side. Yummy!!
Recipe Note
I haven't included exact measurements. This salad is very adaptable to your personal preferences. More of this, less of that, or add/replace any of the vegetables with what you have or like. If you want a vegetarian option use grilled halloumi or tofu in place of the chicken.
