Yellow Beans with Tomatoes and Grilled Eggplant with Feta

These two sides made delicious dishes served with grilled chicken, but can complement any protein you like, from steak to pork to tofu.

Ingredients

1 lb yellow beans, cooked but still crisp

2 tbsp olive oil

1/2 c diced onion or shallots

pinch of chili flakes (optional)

2 garlic cloves, minced
-
4 small fresh tomatoes, diced
-
fresh basil or parsley
-
salt and pepper
-
2 eggplant, 1/2" slices
-
2 tsp salt
-
1/2 c olive oil
-
3 garlic cloves, minced
-
2 tbsp each fresh Italian parsley and oregano
-
1/2 tsp salt
-
1/4 tsp pepper
-
feta to crumble on top

Grilled Eggplant with Feta
Directions
Yellow Beans with Tomatoes
Heat the oil, add the onion and cook for 5 minutes. Add the garlic and chili flakes, stir for 1 minute. Add the tomatoes, bring to a boil then reduce to a simmer for 10 minutes. Add the beans, and heat through. Season with salt and pepper, garnish with the fresh herbs.
Grilled Eggplant with Feta
Sprinkle the salt on both sides of the eggplant, let it sit for 15 minutes. Pat dry with a paper towel.
Combine the remaining ingredients. Dip the eggplant into the oil, both sides.
Grill for 3-4 minutes per side. Remove and dip back into the remaining oil.
Place on a serving platter, top with crumbled feta.
