Creamy Potato Salad

Ingredients

⅓ c mayonnaise

1 tbsp lime juice

½ tsp salt

½ tsp pepper

½ tsp dried oregano

1 garlic clove, minced

¾ tsp cumin seed, toasted, then ground in a mortar and pestle (or ground cumin is fine)

1 bag mini potatoes, grilled or roasted, cooled and cut into quarters

½ red pepper, diced

1 ½ c grilled corn
-
½ c thinly sliced green onions
-
¼ c chopped fresh cilantro
-
½ c shredded cheddar

Directions
Combine the potatoes, red pepper, corn, green onions, cilantro and cheddar. Add enough dressing to coat the salad but you may not need it all. Just refrigerate the leftovers for use on something else.
