Ingredients

6 eggs

1 zucchini, thinly sliced

1 small onion, diced
-
dried herbs (whatever you enjoy)

1 c cheddar, grated
-
salt and pepper

2 small vine tomatoes, thinly sliced

Rudolph's bread for toast
Directions
Whisk eggs with salt and pepper.
Heat a little oil, sauté the onion and zucchini for 8-10 minutes.
Add to the eggs, stir in half of the grated cheese.
Mix well, pour into a greased pie plate.
Top with the tomato slices and the remaining cheese.
Bake at 400° for about 25 minutes or until set. Serve with toast.
