One of my favourite times of year is Ontario Asparagus season.
Asparagus and Tomato Salad

Asparagus can be served in a salad, an omelette, on a tart, with poached eggs, on the barbecue.

Ingredients

2 lb asparagus, trimmed

1 pkg grape or cherry tomatoes, halved

1/2 c thinly sliced red onion

1/3 c toasted pine nuts

1 c feta, crumbled (save 1/4 c for garnish)

6 tbsp balsamic vinegar

4 tbsp olive oil
-
2 tsp honey
-
2 tsp dijon mustard

1 garlic clove, minced

salt and pepper

Dressing
Directions
Mix dressing together and set aside.
Grill or cook the asparagus until tender crisp. Cut into 2" pieces.
Place the tomatoes, red onion and asparagus into a serving bowl.
Toss with the dressing. Gently stir in the feta and pine nuts.
Top with the remaining feta and serve.
