I love seasonal, local food, so I'm enjoying strawberries as much as I can while they are still in season. This cake is a simple one to make and can be served with ice cream or strawberry sauce on the side.
Strawberry Cake

This cake is a crowd pleaser, moist and bursting with strawberries, perfect for a dessert after a barbeque.

Ingredients

1 1/2 c flour

1 1/2 tsp baking powder

1/2 tsp salt

6 tbsp butter, softened

1 c sugar

1 egg
-
1 tsp vanilla or almond extract

1/2 c buttermilk
-
1 lb strawberries, hulled and thickly sliced

1/3 c sugar

1 tbsp lemon juice
Strawberry Sauce (makes 1 1/2 cups)
Directions
Preheat the oven to 350°F. Butter a 9" pan.
Combine the flour, baking powder and salt.
Cream the butter and sugar for 3-4 minutes. Add the egg and extract, mix until combined. Add the flour and buttermilk alternately, ending with the flour.
Spread the batter into the buttered pan. Top with the halved strawberries, covering the whole top. Sprinkle with about 2 tbsp of sugar. Bake at 350° for 10 minutes, lower the heat to 325° for 45-55 minutes or until a toothpick inserted comes out clean.
Strawberry Sauce
Combine in a saucepan over medium heat, bring to a boil. Reduce heat and simmer for 20-25 minutes or until thickened. Remove and cool. Serve with the cake, or over ice cream.
