Tortilla Egg Cups

Alternatively you can cut out rounds from the tortillas (as shown) and tuck them into the muffin cups to hold the egg mixture, and dispense with the paper muffin cups.
I used the IndianLife Spinach Tortillas, and you can see the spinach embedded in the wraps in the picture!

Ingredients

2 tortillas cut into 1" strips

8 eggs, beaten

salt and pepper

½ c diced red pepper

½ c finely chopped broccoli

½ c finely chopped onion

½ c grated cheese
Directions
Preheat the oven to 350°. Place paper muffin cups into your muffin pan. Roll the tortillas up, place them into the muffin pan. Unroll them slightly, and fill around the tortilla strip with the vegetables. Top with the grated cheese. Pour the beaten eggs over the vegetables and cheese, filling about 3/4 full. Place in the oven and bake for 15-20 minutes.
