Shrimp with Fennel and Tomatoes, and Greek Lemon Potatoes. These two recipes made a great combination of flavours. Start the potatoes first and then add the shrimp to the oven after you have removed the potatoes from the broth.
I feel like fennel is something people are sometimes hesitant to try. It is equally good raw (thinly sliced in a salad with red onion and orange segments) and cooked (roasted or sautéed, great with chicken or fish.)
Fennel is beneficial for heart health, inflammation, a good source of vitamin C and is low in calories. It has a slight licorice flavour which is more noticeable when eaten raw.
