Grilled Soy Lime Chicken with Asparagus & Potatoes

Long weekend ahead, time for the barbecue. When Ontario asparagus arrives I could eat it every day. Adding it to potatoes also done on the barbecue makes an easy and delicious side to have with Soy Lime Barbecued Chicken.
Ingredients

1 bag mini potatoes, washed and cut into quarters

1-2 tbsp olive oil

1 garlic clove, minced

1/2 tsp each salt and pepper

1 tsp dried herbs, whatever you like

1 bunch asparagus

olive oil
-
salt and pepper

1 green onion, finely chopped

1 garlic clove, minced

1 tbsp grated fresh ginger

2 tbsp lime juice
-
1 tbsp brown sugar
-
1 tbsp oil (use half sesame oil if you like)

¼ cup Tamari sauce
-
1/2 tbsp sriracha or hot sauce

2 large chicken breasts

Soy Lime Marinade
Directions
Potatoes
Toss together and wrap in a foil pouch. Grill on the barbecue for 20-25 minutes.
Asparagus
Combine and place on the grill, and grill 8-10 minutes until tender.
Place asparagus and potatoes in a bowl. Add 2 TBSP grated parmesan cheese, stir to combine. Season with salt and pepper if needed.
Soy Lime Marinade
Combine all ingredients. Add chicken and refrigerate for up to 3 hours.
Grill the chicken until it reaches 165° when checked with a thermometer.
Recipe Note
Whenever I buy chicken breasts I always remove the tenders and freeze them. It makes for a quick meal when you thaw and cook them. That's what I used for this meal.
