This is an easy to make salad, perfect to take to a potluck. It's filling enough for dinner, hopefully some leftovers for lunch the next day. If you like it spicier a little hot sauce can be added.
We had an awesome roast chicken dinner on the weekend, the whole chickens in our meat dept. are such great value, moist and delicious when oven roasted or done as a beer can chicken on the barbecue. With some leftover corn also grilled on the barbecue we had a chicken, corn and red pepper pizza one night, grilled quesadillas and salad another night.
Looking for something easy for dinner when the weather is warm, I tried a package of Krinos seasoning mix for souvlaki on cubed chicken breasts.
I followed the package directions and let it marinate for about 1 hour while I prepared a salad.
We barbecued the chicken skewers and they were so flavourful and moist. They would be great with some tzatziki on the side.
