This was so tasty, and a nice change from a meat based taco. Very filling and the kitchen smelled great while the cauliflower was baking. You can also serve this in a bowl if you want to skip the tortilla!
A twist on traditional lemon bars, this is a smooth, tart and sweet treat. The crust may seem a little too " buttery" when pressed into the pan but bakes into a chewy base. Next time I make them I am going to try grapefruit. Can't wait!
This is a great way to use any vegetables in your fridge. Chopped broccoli, or zucchini are good choices. I didn't have either so I used kale and tomatoes. Adapt to your favorites.
