A very summery dessert, tart and sweet, featuring my new favourite crust: crushed Tate's Bakery Coconut Crisp cookies. I think the light coloured coconut and bright red raspberries would also make a perfect Canada Day dessert.
Match this salad up with the marinated chicken thighs. It's a great summer supper. If you have some leftover potatoes from another meal in the fridge, feel free to add them to this salad.
For a make ahead, easy meal place the chicken thighs in the marinade, place in a ziplock bag or shallow container and freeze. Quick meal for a work night, pull out of the freezer and place in the fridge in the morning. Thawed and ready to grill when you get home.
