Potato Kale Soup

This is a filling but not too heavy soup. If you have leftover cooked chicken you can add that, or chickpeas for protein.  We had lightly toasted baguette slices with melted cheese along with the soup. Very good.

Tomato and Fennel Chicken

I feel like fennel is something people are sometimes hesitant to try. It is equally good raw (thinly sliced in a salad with red onion and orange segments) and cooked (roasted or sautéed, great with chicken or fish.) Fennel is beneficial for heart health, inflammation, a good source of vitamin C and is low in calories. It has a slight licorice flavour which is more noticeable when eaten raw.

Vegetable Curry

With food prices being a concern for so many people, making sure to not waste what you have in your fridge is more important than ever. I have always been a fan of leftovers and never like to throw away vegetables that I forgot were in my fridge. A cool night and a quick check in my crisper, vegetable curry was my dinner solution. This is by no means an authentic curry, but a comforting meal.

Tofu Meatballs

This budget friendly, meat free meal will easily serve a family of four. Add in a salad and some garlic bread and you have a complete meal. The meatballs are moist on the inside, crispy on the outside. If you want to add some extra vegetables to the sauce, baby spinach or grated carrots will work well.

Although we are all thinking about healthier eating after the holidays, following a week of having family here and lots of cooking I was ready for a quick, no-think meal after my first day back to work.  One of my guilty pleasure comfort meals is a Tuna Melt!
